Sodium Bicarbonate also is called  Baking soda is a weak base, an inorganic compound that is easily soluble in water and slightly soluble in ethanol (some say insoluble). The aqueous solution is slightly alkaline. It is prone to decomposition when heated and slowly decomposes in humid air, producing carbon dioxide. It begins to decompose at around 50 ℃ and completely decomposes when heated to 270 ℃. When encountering acid, it strongly decomposes and produces carbon dioxide. Changli uses this property as a leavening agent for making biscuits, cakes, Mantou and bread. Sodium bicarbonate will leave residual sodium carbonate after action, and excessive use can cause the finished product to have an alkaline taste.

Application:

  • 1. In food processing, it is one of the most widely used bulking agents, used in the production of biscuits, cakes, steamed bread, bread, etc. It is a carbon dioxide generator in soda drinks, because sodium bicarbonate solids begin to gradually increase above 50°C.
